Sesame Beef Stir-Fry Noodles (Print Version)

# Ingredients:

→ Beef

01 - 400 g flank steak or sirloin, thinly sliced across the grain
02 - 1 tablespoon cornstarch
03 - 1 tablespoon soy sauce
04 - 1 teaspoon toasted sesame oil

→ Noodles

05 - 250 g egg noodles or wheat noodles

→ Vegetables

06 - 1 red bell pepper, thinly sliced
07 - 100 g snap peas, trimmed
08 - 2 medium carrots, julienned
09 - 3 spring onions, sliced, white and green parts separated
10 - 2 cloves garlic, minced
11 - 1 tablespoon fresh ginger, minced

→ Sauce

12 - 3 tablespoons soy sauce
13 - 2 tablespoons oyster sauce
14 - 1 tablespoon hoisin sauce
15 - 2 teaspoons toasted sesame oil
16 - 1 tablespoon rice vinegar
17 - 1 tablespoon honey or brown sugar
18 - 2 tablespoons water
19 - 1 teaspoon chili flakes, optional

→ Garnish

20 - 2 tablespoons toasted sesame seeds
21 - Green parts of spring onions, sliced

# Steps:

01 - In a bowl, combine the sliced beef with cornstarch, 1 tablespoon soy sauce, and 1 teaspoon toasted sesame oil. Mix well and set aside to marinate while preparing remaining ingredients.
02 - Cook the noodles in boiling water following package instructions. Drain, rinse under cold water, and set aside.
03 - In a small bowl, blend together all sauce components until smooth.
04 - Heat 1 tablespoon vegetable oil in a large wok or deep skillet over high heat. Add the marinated beef and sear for 2–3 minutes until browned. Transfer beef to a plate and set aside.
05 - In the same wok, add additional oil if necessary. Sauté garlic, ginger, and white parts of spring onions for 30 seconds until aromatic.
06 - Add red bell pepper, snap peas, and carrots. Stir-fry for 2–3 minutes, maintaining a crisp-tender texture.
07 - Return the seared beef to the pan. Add cooked noodles and the prepared sauce. Toss thoroughly for 2–3 minutes until heated through and evenly coated.
08 - Plate the noodles and beef, then scatter with toasted sesame seeds and green spring onions before serving immediately.

01 - For a vegetarian alternative, replace beef with firm tofu and opt for vegetarian oyster sauce.
