In a skillet over medium heat, cook the sausage links until browned and fully cooked. Set aside.

Using the same skillet, scramble the eggs to your desired consistency. Remove from heat.

Place 1 sausage link, scrambled eggs, and a generous sprinkle of shredded cheese in the center of each tortilla.

Roll up the tortillas tightly, optionally folding in the sides. Return them seam-side down to the skillet and toast over medium heat until golden brown and heated through, 2–3 minutes per side.

Serve the roll-ups warm, or wrap in foil for an on-the-go breakfast.
