Pizza Pot Pies (Print Version)

# Ingredients:

01 - 1 tablespoon butter, softened
02 - ½ tablespoon olive oil
03 - ¼ teaspoon salt
04 - ¼ teaspoon garlic powder
05 - ¼ teaspoon Italian seasoning, plus extra for topping (optional)
06 - Pinch of black pepper
07 - Cooking spray or oil, to grease the tins
08 - 8 refrigerated biscuits (16-ounce package)
09 - ¼ cup meatless pasta or pizza sauce
10 - 3 ounces pepperoni, chopped
11 - 7-8 ounces shredded mozzarella cheese

# Instructions:

01 - Combine the softened butter, olive oil, salt, garlic powder, Italian seasoning, and black pepper in a small bowl. Stir well to combine.
02 - Preheat the oven to 350°F and prepare the muffin tins. Spray or oil the muffin pan lightly with cooking spray, then use a paper towel to dab away excess oil.
03 - Open the biscuit package and separate the biscuits. Place one biscuit in each muffin tin and press gently to mold it on the bottom and sides. Continue molding until it is securely placed.
04 - Use a fork to prick the biscuits a few times on the bottoms and sides.
05 - Brush the inside of the biscuits with the prepared butter mixture, then lightly brush them with the pasta or pizza sauce (about ½ heaping teaspoon).
06 - Fill each biscuit cup with 1 heaping tablespoon of mozzarella cheese, followed by ½ heaping tablespoon of pepperoni. Repeat this layering once more with 1 tablespoon of mozzarella and ½ tablespoon of pepperoni. Sprinkle a pinch of Italian seasoning on top if desired.
07 - If using individual foil muffin cups, place them on a sheet pan before baking for added support.
08 - Bake the pot pies for 20-23 minutes, or until the edges of the biscuit crust are golden brown and the cheese is melted.
09 - Gently lift the pot pies out of the muffin pan and arrange them on a plate or platter. Alternatively, serve them directly in the individual tins if desired.

# Notes:

01 - Check on the pot pies after 15-18 minutes to gauge remaining cooking time. Rotate the pan 180 degrees halfway if your oven has hot spots.
02 - If using a muffin pan, you may need to use a spatula to separate touching biscuits before removing them.
