# Ingredients:

→ Cauliflower

01 - 1 large head cauliflower, trimmed
02 - 2 tablespoons olive oil
03 - 1 teaspoon sea salt
04 - 0.5 teaspoon freshly ground black pepper
05 - 0.5 teaspoon smoked paprika
06 - 0.5 teaspoon ground cumin

→ Roasted Grapes

07 - 150 grams seedless red grapes, washed and stems removed
08 - 1 tablespoon olive oil
09 - 0.25 teaspoon sea salt

→ Garnish

10 - 75 grams feta cheese, crumbled
11 - 0.25 cup fresh flat-leaf parsley, chopped
12 - zest of 1 lemon
13 - 2 tablespoons toasted pine nuts (optional)

# Steps:

01 - Preheat oven to 200°C and line a baking sheet with parchment paper.
02 - Place whole cauliflower on the prepared baking sheet. Drizzle with 2 tablespoons olive oil, then rub with sea salt, black pepper, smoked paprika, and ground cumin, ensuring the surface is evenly coated.
03 - Cover cauliflower loosely with foil and roast for 35 minutes.
04 - While cauliflower roasts, toss grapes in a small mixing bowl with 1 tablespoon olive oil and 0.25 teaspoon sea salt until coated.
05 - Remove foil from cauliflower. Arrange the grapes around the cauliflower on the baking sheet.
06 - Return to oven and roast uncovered for 20 minutes, or until cauliflower is golden and tender when pierced with a knife and grapes are softened and slightly caramelized.
07 - Transfer roasted cauliflower to a serving platter. Arrange grapes around the base. Sprinkle with crumbled feta cheese, parsley, lemon zest, and pine nuts if using.
08 - Serve warm, cutting cauliflower into wedges for plating.
