Cover cauliflower loosely with foil and roast for 35 minutes.

While cauliflower roasts, toss grapes in a small mixing bowl with 1 tablespoon olive oil and 0.25 teaspoon sea salt until coated.

Remove foil from cauliflower. Arrange the grapes around the cauliflower on the baking sheet.

Return to oven and roast uncovered for 20 minutes, or until cauliflower is golden and tender when pierced with a knife and grapes are softened and slightly caramelized.

Transfer roasted cauliflower to a serving platter. Arrange grapes around the base. Sprinkle with crumbled feta cheese, parsley, lemon zest, and pine nuts if using.
