In a saucepan over medium heat, combine water, butter, sugar, and salt. Bring to a boil.

Once boiling, reduce heat to low and add flour all at once. Stir vigorously until a dough forms and pulls away from the sides (about 2–3 minutes).

Remove the saucepan from heat and let the dough cool for 5–7 minutes.

Add vanilla and beat in eggs one at a time until smooth and glossy. The dough will be thick and sticky.

Transfer the dough to a piping bag fitted with a star tip. Pipe 1-inch bites onto a parchment-lined baking tray.

Place the tray in the freezer for 10 minutes to firm up.

Preheat your air fryer to 375°F (190°C). Lightly spray the basket with cooking spray.

Air fry the bites in batches for 8–10 minutes or until golden brown and puffed.

While still warm, brush with melted butter and toss in the cinnamon-sugar mixture to coat completely.
