Preheat your oven to 350°F (175°C).

Season pork chops on both sides with salt and pepper.

Heat vegetable oil in a large skillet over medium-high heat and brown the pork chops on both sides. Remove and set aside.

In the same skillet, reduce heat to medium and cook onions and garlic until translucent.

Sprinkle flour over the onion mixture, stirring constantly to create a roux.

Gradually add milk and chicken broth, stirring until the sauce thickens. Remove from heat.

In a large casserole dish, layer half the sliced potatoes. Pour half the onion sauce over the potatoes and sprinkle with half the cheese.

Repeat with remaining potatoes, sauce, and cheese. Sprinkle paprika over the top.

Place browned pork chops on top of the casserole. Cover with foil and bake for 1 hour.

Remove foil and bake for an additional 15-20 minutes until pork is fully cooked and potatoes are tender.

Let the casserole rest for 10 minutes. Garnish with fresh parsley before serving.
