Slow Cooker Honey Mustard Chicken (Print Version)

# Ingredients:

→ Chicken

01 - 3 lbs chicken thighs, boneless, skinless
02 - 1/4 cup honey
03 - 3 tablespoons whole grain Dijon mustard
04 - 1/4 cup water
05 - 2 tablespoons water, additional
06 - 2 teaspoons cornstarch

→ Slaw

07 - 2 cups red cabbage, chopped or shredded
08 - 1/4 cup olive oil
09 - 3 tablespoons apple cider vinegar
10 - Pinch of salt and pepper
11 - 1 teaspoon whole grain Dijon mustard
12 - 2 teaspoons honey
13 - 2 teaspoons sugar

# Instructions:

01 - Mix honey, mustard, and the 1/4 cup water. Pour the mixture into a large slow cooker.
02 - Add chicken thighs to the slow cooker and toss with the sauce.
03 - Cook the chicken on low for 4-4½ hours.
04 - Mix 2 tablespoons of water with cornstarch and add to the slow cooker. Shred the chicken and cook for an additional 20 minutes or until the sauce thickens. Adjust seasoning with salt and pepper to taste.
05 - Mix all slaw ingredients together. Refrigerate overnight for the best results.
06 - Serve honey mustard chicken on a soft roll with slaw on top.
