Slow Cooker Chicken Jambalaya (Print Version)

Flavorful slow cooker dish with chicken, sausage, and Cajun spices. Great for easy weeknight meals.

01 - 2 chicken breasts, cut into chunks
02 - 12 oz andouille sausage, sliced
03 - 2 tbsp Cajun seasoning
04 - 1 onion, diced
05 - 2 stalks celery, diced
06 - 1 red bell pepper, diced
07 - 1 green bell pepper, diced
08 - 2 cloves garlic, minced
09 - 1 can (15 oz) crushed tomatoes
10 - 1 tsp dried oregano
11 - 2 cups chicken broth
12 - 2 cups cooked rice

# Steps:

01 - Place the chicken, sausage, Cajun seasoning, onion, celery, bell peppers, garlic, crushed tomatoes, oregano, and chicken broth into the slow cooker. Stir to combine.
02 - Cover and cook on low for 6–8 hours or on high for 3–4 hours, until chicken is cooked through and vegetables are tender.
03 - Before serving, stir in the cooked rice until well mixed and heated through.
04 - Garnish with chopped green onions or parsley if desired. Serve warm.

# Notes:

01 - Adjust the heat level by adding a pinch of cayenne pepper or extra Cajun seasoning if you prefer it spicier.
02 - Smoked sausage can be used instead of andouille for a different flavor.
03 - For a lighter version, use turkey sausage.
