Slow Cooker Beef Gyros (Print Version)

Tender beef slow-cooked with herbs, served on warm pitas with crisp veggies and tangy tzatziki for a flavorful meal.

# Ingredients:

→ Beef

01 - 2 Tbsp olive oil
02 - 1 red onion, sliced
03 - 3-4 lbs beef chuck roast, cut into 2 to 3-inch chunks
04 - 4 cloves garlic, minced
05 - 2 lemons, juiced
06 - 1 tsp dried oregano
07 - 1 tsp salt
08 - 1/2 tsp black pepper

→ Gyros

09 - 8 Greek-style pitas
10 - Diced red onion
11 - Diced tomatoes
12 - Diced cucumber
13 - Shredded lettuce
14 - Tzatziki sauce

# Steps:

01 - Drizzle olive oil into the bottom of the slow cooker and layer the sliced red onions over it.
02 - Place the beef chunks over the onions. Add minced garlic, lemon juice, oregano, salt, and black pepper on top.
03 - Cover the slow cooker with its lid and cook on low for 8 hours.
04 - Once cooked, remove the lid and shred the beef using two forks.
05 - If desired, warm the pita breads in a skillet. Serve shredded beef on the pitas, topping with diced onion, tomatoes, cucumber, shredded lettuce, and tzatziki sauce.

# Notes:

01 - To char pita bread, brush with olive oil and place in a skillet on medium-high heat, cooking each side for 10-15 seconds.
02 - Store leftovers in an airtight container in the refrigerator for up to five days or freeze for up to three months.
