Melt butter in a large skillet over medium heat. Add onion and green bell pepper, sauté for 5 minutes until softened. Stir in garlic and cook for 1 minute until fragrant.

Add ground beef, breaking it up with a wooden spoon. Cook until browned and no longer pink, around 6 to 8 minutes. Drain excess fat if needed. Incorporate ketchup, brown sugar, Worcestershire sauce, yellow mustard, salt, and black pepper. Simmer for 5 minutes until mixture thickens, then remove from heat.

Butter one side of each bread slice with softened butter. Place 4 slices, butter side down, on a preheated griddle or large skillet over medium heat. Layer each with 50 grams shredded cheddar, about 120 grams of warm Sloppy Joe filling, and another 50 grams cheese. Top with remaining bread slices, butter side up.

Cook sandwiches for 2 to 3 minutes until the base is golden brown. Flip carefully and cook additional 2 to 3 minutes until the other side is golden and cheese is fully melted.

Transfer sandwiches to a cutting board. Rest for 1 to 2 minutes before slicing in half. Serve immediately while hot and the cheese is melty.
