In a mixing bowl, whisk together whole milk, heavy cream, granulated sugar, vanilla extract, and a pinch of salt until the sugar fully dissolves.

Pour the ice cream mixture into an ice cream maker and churn according to manufacturer’s instructions. Transfer to a container and freeze until firm, at least 3 hours.

In a small saucepan over medium heat, combine water and granulated sugar, stirring until the sugar dissolves. For black cherry flavor, add black cherry juice, lemon juice, and salt, then simmer for 2–3 minutes. For peanut butter flavor, whisk in peanut butter and salt until smooth, simmering for 2–3 minutes. Remove from heat and cool completely. Refrigerate until thoroughly chilled.

For each serving, add 2–3 tablespoons of homemade soda base to a tall glass. Add ice cubes if desired, then pour in 180 ml chilled soda water and stir gently. Top with two generous scoops of homemade ice cream. Garnish with whipped cream and a maraschino cherry (for black cherry variant), or chopped peanuts (for peanut butter variant), as preferred. Serve immediately with a straw and spoon.
