# Ingredients:

01 - 1 lb ground chicken
02 - 1/4 cup grated Parmesan cheese
03 - 1/4 cup breadcrumbs, preferably panko
04 - 2 cloves garlic, minced
05 - 1 egg
06 - 1/4 cup chopped fresh parsley (optional)
07 - 1/2 tsp onion powder
08 - 1/2 tsp dried basil
09 - 1/2 tsp salt
10 - 1/4 tsp black pepper
11 - 2 tbsp olive oil, for greasing
12 - 1 tbsp butter, for topping (optional)

# Instructions:

01 - Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper.
02 - In a large bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, minced garlic, egg, parsley, onion powder, basil, salt, and pepper.
03 - Mix everything together until just combined. Avoid overmixing to keep the meatloaf tender.
04 - Divide the mixture into four equal portions and shape each portion into a small loaf (about 3 inches long).
05 - Place the mini meatloaves on the prepared baking sheet. Drizzle olive oil over the top of each meatloaf to help them brown.
06 - Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C) and the tops are golden brown.
07 - For an extra boost of flavor, melt butter and drizzle it over the meatloaves right before serving.
08 - Serve with your favorite sides like mashed potatoes, steamed vegetables, or a fresh salad.

# Notes:

01 - For a lighter version, you can use ground turkey instead of ground chicken.
02 - If you prefer a crispier texture, try baking the meatloaves on a wire rack placed over the baking sheet.
03 - You can freeze the cooked meatloaves for up to 3 months. Reheat them in the oven at 350°F (175°C) for 15-20 minutes.
