Bring a large pot of salted water to a boil. Cook the tagliatelle until al dente according to package instructions. Drain and rinse briefly with cold water to halt cooking.

Combine the cooked tagliatelle with 1 tablespoon of unsalted butter and sugar, if using. Gently toss to coat, ensuring the noodles are separated and flavored.

On a parchment-lined baking tray, shape four equal portions of tagliatelle into nest forms, leaving a hollow at the center for filling.

Heat the remaining 1 tablespoon unsalted butter in a large nonstick skillet over medium heat. Using a spatula, delicately transfer each nest to the skillet and pan-fry for 2–3 minutes per side until golden and crisp at the edges.

Place the nests on serving plates. While still warm, fill each hollow center with 2 tablespoons of Nutella.

Generously sprinkle with chopped roasted hazelnuts, and dust with powdered sugar if desired. Serve immediately.
