Combine watermelon chunks, mint leaves, lime juice, and granulated sugar in a blender or food processor.

Blend the mixture until completely smooth. Taste and adjust the sweetness if necessary.

Pour the blended mixture through a fine mesh sieve into a shallow, freezer-safe dish to remove any pulp if a smoother granita is desired.

Transfer the dish to the freezer and freeze for 45–60 minutes. Remove and scrape the edges with a fork to break up forming ice crystals.

Return the dish to the freezer. Every 30 minutes, repeat scraping the mixture with a fork for a total of 3–4 times, until the granita is fluffy and crystalline, about 4 hours in total.

Fluff the frozen granita with a fork and spoon into chilled glasses. Garnish each serving with fresh mint leaves and serve immediately.
