Mediterranean Chicken Zucchini Bake (Print Version)

Mediterranean chicken zucchini bake with fresh veggies and feta.

# Ingredients:

01 - 2 medium zucchinis, sliced into half-moons
02 - 1 pound cooked chicken breast, shredded or diced
03 - 1 cup cherry tomatoes, halved
04 - 1/2 red onion, thinly sliced
05 - 1/2 cup crumbled feta cheese
06 - 1/2 teaspoon dried oregano
07 - 1/4 teaspoon garlic powder
08 - Salt and pepper, to taste
09 - 1 tablespoon olive oil
10 - 1/4 cup fresh parsley, chopped

# Steps:

01 - Preheat oven to 375°F (190°C).
02 - In a large bowl, toss zucchini, cherry tomatoes, and red onion with olive oil, oregano, garlic powder, salt, and pepper.
03 - Add the cooked chicken and mix well.
04 - Transfer the mixture to a greased baking dish and spread it evenly.
05 - Sprinkle crumbled feta cheese on top.
06 - Bake for 25–30 minutes, or until vegetables are tender and the top is slightly golden.
07 - Remove from oven and let cool for 5 minutes.
08 - Garnish with chopped parsley and serve warm.

# Notes:

01 - For additional flavor, sprinkle extra oregano and drizzle olive oil when serving.
