# Ingredients:

→ Base

01 - 150 g pitted Medjool dates
02 - 60 g dried tart cherries

→ Nut Butter

03 - 80 g unsweetened pistachio butter

→ Flavor & Boost

04 - 1 teaspoon matcha powder
05 - 0.5 teaspoon pure vanilla extract (optional)
06 - Pinch of sea salt

→ For Rolling (optional)

07 - 2 tablespoons chopped pistachios
08 - 1 teaspoon additional matcha powder

# Steps:

01 - Combine pitted dates and dried cherries in a food processor. Pulse until finely chopped and cohesive.
02 - Add pistachio butter, matcha powder, vanilla extract if using, and sea salt. Process until the mixture forms a homogenous, sticky dough.
03 - Portion dough by tablespoonfuls and roll between palms to create uniform balls.
04 - Roll each ball in chopped pistachios or dust with matcha powder for enhanced texture and color.
05 - Arrange bites on a parchment-lined tray and refrigerate for at least 30 minutes to firm.
06 - Transfer to an airtight container and refrigerate for up to 1 week.
