08 - 2 ripe peaches, halved, pitted, and sliced into wedges
09 - 1 teaspoon olive oil

→ Hot Honey

10 - 2 tablespoons honey
11 - 1/2 teaspoon chili flakes
12 - Pinch of sea salt

→ Garnishes

13 - Fresh mint leaves, torn
14 - Flaky sea salt

# Steps:

01 - Preheat a grill pan over medium-high heat. Lightly brush peach wedges with olive oil. Grill for 1–2 minutes per side until caramelized and lightly charred. Set aside.
02 - Combine cottage cheese, Greek yogurt, lemon juice, salt, and pepper in a food processor or blender. Blend until the mixture is smooth and creamy. Adjust seasoning to taste.
03 - Brush bread slices on both sides with olive oil. Toast in a skillet or under a broiler until golden and crisp, approximately 2 minutes per side.
04 - Gently warm honey with chili flakes and a pinch of sea salt in a small saucepan or microwave-safe bowl for 30–60 seconds. Stir thoroughly and let infuse for several minutes.
05 - Spread a generous layer of whipped cottage cheese over each piece of toast. Top with the grilled peach wedges.
06 - Drizzle with hot honey, then garnish with torn mint leaves and a sprinkle of flaky sea salt. Serve immediately.
