# Steps:

01 - Preheat the oven to 375°F (190°C).
02 - Peel and dice the potatoes into small cubes.
03 - Chop the onion and mince the garlic cloves.
04 - In a large skillet, heat the olive oil over medium heat.
05 - Add the chopped onion and minced garlic, sauté until fragrant.
06 - Add the ground beef to the skillet, season with salt, black pepper, dried thyme, and paprika.
07 - Cook the ground beef until browned and cooked through. Pour in the beef broth, stir well, and allow the mixture to simmer for a few minutes.
08 - In a mixing bowl, combine the cooked ground beef mixture with the diced potatoes.
09 - Fold in the sour cream and half of the shredded cheddar cheese.
10 - Transfer the mixture to a baking dish and spread it out evenly.
11 - Top with the remaining shredded cheddar cheese. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
12 - Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
