Preheat your oven to 180°C (350°F).

Put all ingredients, except the shredded carrot, into a bowl and blend with an immersion blender. Alternatively, use a blender to blend until smooth.

Stir in the shredded carrots until evenly combined.

Line a small 18cm (7x7 inches) baking pan with parchment paper. Spread the mixture evenly in the pan.

Bake at 180°C (350°F) for 20-30 minutes, or until a toothpick inserted in the center comes out clean.
