Flourless Oatmeal Carrot Cake (Print Version)

Healthier flourless carrot cake, made with oats and honey. Perfect for mornings with coffee or tea.

# Ingredients:

01 - 2 eggs
02 - ½ cup honey
03 - 2 carrots, shredded
04 - 1 cup oats
05 - 1/2 tsp baking soda
06 - 1 tbsp cinnamon
07 - 1/4 cup butter, room temperature
08 - 1 tsp vanilla

# Steps:

01 - Preheat your oven to 180°C (350°F).
02 - Put all ingredients, except the shredded carrot, into a bowl and blend with an immersion blender. Alternatively, use a blender to blend until smooth.
03 - Stir in the shredded carrots until evenly combined.
04 - Line a small 18cm (7x7 inches) baking pan with parchment paper. Spread the mixture evenly in the pan.
05 - Bake at 180°C (350°F) for 20-30 minutes, or until a toothpick inserted in the center comes out clean.
06 - Let the cake cool completely before slicing and serving.

# Notes:

01 - This carrot cake is delicious on its own, but you can create an easy frosting by mixing cream cheese, honey, and vanilla together. Spread over the cake once cooled.
