Crispy Eggplant Parmesan (Print Version)

Crispy breaded eggplant slices layered with rich tomato sauce, mozzarella and Parmesan cheese in a classic Italian-American dish.

# Ingredients:

→ Eggplant & Breading

01 - 2 medium eggplants, sliced into ½-inch rounds
02 - 1 tbsp salt (for sweating eggplant)
03 - 1 cup all-purpose flour
04 - 3 large eggs, beaten
05 - 2 cups breadcrumbs (Italian-style or plain with dried herbs)
06 - ½ cup grated Parmesan cheese (mixed into breadcrumbs)
07 - Olive oil, for frying

→ Sauce & Cheese

08 - 2 tbsp olive oil
09 - 2 cloves garlic, minced
10 - 1 can (28 oz) crushed tomatoes
11 - 1 tsp dried oregano
12 - ½ tsp red pepper flakes (optional)
13 - Salt and pepper to taste
14 - 1 tsp sugar (optional, to balance acidity)
15 - 2 cups shredded mozzarella cheese
16 - ½ cup grated Parmesan cheese (for layering)
17 - Fresh basil leaves (optional, for garnish)

# Steps:

01 - Lay eggplant slices on a tray and sprinkle with salt. Let sit for 30 minutes to draw out moisture, then rinse and pat dry.
02 - Set up a breading station with flour, beaten eggs, and breadcrumbs mixed with Parmesan. Dredge eggplant slices in flour, dip in egg, then coat with breadcrumb mixture.
03 - Heat olive oil in a large skillet over medium heat. Fry eggplant slices in batches for 2–3 minutes per side until golden. Drain on paper towels.
04 - For the sauce, heat 2 tbsp olive oil in a saucepan. Sauté garlic for 1 minute, then add crushed tomatoes, oregano, red pepper flakes, salt, and sugar. Simmer for 15–20 minutes.
05 - Preheat oven to 375°F (190°C). In a 9x13 inch baking dish, spread a thin layer of sauce, then layer fried eggplant slices, more sauce, mozzarella, and Parmesan. Repeat layers, finishing with cheese on top.
06 - Bake uncovered for 25–30 minutes until bubbly and golden. Let rest for 10 minutes before serving.
07 - Garnish with fresh basil if desired.

# Notes:

01 - For a lighter version, bake breaded eggplant slices at 425°F (220°C) for 20 minutes, flipping halfway.
02 - Serve with spaghetti, garlic bread, or a green salad.
