Place the chicken in the bottom of the crockpot.

In a bowl, whisk together soy sauce, honey, brown sugar, vinegar, sesame oil, garlic, and ginger.

Pour the prepared sauce over the chicken.

Cover the crockpot and cook on LOW for 5–6 hours or HIGH for 3–4 hours until the chicken is tender and fully cooked.

Remove the chicken and shred it with two forks.

In a small bowl, whisk cornstarch and water. Stir the mixture into the sauce in the crockpot.

Return the shredded chicken to the crockpot, stir well, and cook for an additional 10–15 minutes until the sauce slightly thickens.

Serve the teriyaki chicken over cooked rice and garnish with sesame seeds and chopped green onions.
