Crispy, tangy bites packed with fresh dill, pickles, herbs, and crunchy greens in a spinach tortilla.

# Ingredients:

→ Vegetables & Greens

01 - 2 cups baby spinach leaves, washed and dried
02 - 1 cup shredded romaine lettuce
03 - 1/2 cup fresh dill, finely chopped
04 - 1/2 cup finely chopped cucumber
05 - 1/4 cup thinly sliced scallions, green parts only
06 - 1 small avocado, diced

→ Pickle Elements

07 - 3/4 cup dill pickles, finely chopped (reserve 1 tablespoon pickle juice)
08 - 1 tablespoon capers, drained (optional)

→ Dairy & Wraps

09 - 1/2 cup cream cheese, softened
10 - 1/4 cup Greek yogurt or sour cream
11 - 1/2 cup shredded cheddar cheese, mild or sharp (optional)
12 - 4 large spinach or green herb tortillas

→ Seasonings

13 - 1 teaspoon garlic powder
14 - 1/2 teaspoon ground black pepper
15 - 1/4 teaspoon sea salt

# Steps:

01 - In a medium mixing bowl, blend cream cheese, Greek yogurt, reserved pickle juice, garlic powder, black pepper, and sea salt until the mixture is smooth.
02 - Fold in chopped fresh dill, sliced scallions, and drained capers if using.
03 - Gently mix in chopped dill pickles, cucumber, diced avocado, baby spinach, and shredded romaine lettuce until the filling is evenly combined.
04 - Lay each spinach tortilla flat. Evenly spread the dill-pickle filling over each, leaving a 2 cm border around the edge.
05 - Sprinkle shredded cheddar cheese over the filling, if using.
06 - Tightly roll each tortilla into a log. Using a sharp knife, slice each log into four even bite-sized rounds.
07 - Preheat a large nonstick skillet over medium heat. Arrange the bites cut-side down in the skillet and cook for 1–2 minutes per side, pressing gently, until golden and lightly crisped.
08 - Serve the bites immediately, garnished with additional chopped dill if desired.

01 - For a dairy-free version, use plant-based cream cheese and yogurt, omitting cheddar.
02 - Add finely chopped jalapeño to the filling for an extra spicy kick.
03 - Pair with extra pickle chips or a tangy yogurt-based dip.
