Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

Boil or steam carrots for 10–12 minutes, or until fork-tender. Drain and let cool slightly.

Place carrots on the baking sheet and gently smash each one with the bottom of a glass or a fork.

Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, and pepper.

Roast for 20–25 minutes, flipping halfway, until edges are crispy and browned.

In the last 5 minutes, sprinkle with parmesan cheese, if desired.
