Preheat your oven to 400°F (200°C).

In a large bowl, toss the halved or quartered baby potatoes with olive oil, garlic, oregano, thyme, red pepper flakes (if using), salt, and pepper.

Sprinkle grated Parmesan cheese over the potatoes and toss to coat evenly.

Spread the potatoes out in a single layer on a baking sheet. Roast in the oven for 25–30 minutes, flipping halfway through, until the potatoes are golden and crispy on the outside and tender inside.

Remove from the oven and garnish with freshly chopped parsley. Serve hot and enjoy!
