Creamy Tuscan Salmon Pasta (Print Version)

01 - 2 salmon fillets, skin removed, cubed or flaked
02 - 8 oz fettuccine or penne pasta
03 - 2 tablespoons olive oil
04 - 4 cloves garlic, minced
05 - 1/2 cup sun-dried tomatoes, chopped
06 - 2 cups baby spinach
07 - 1 cup heavy cream
08 - 1/2 cup grated parmesan cheese
09 - 1/2 teaspoon Italian seasoning
10 - Salt to taste
11 - Black pepper to taste
12 - Chopped parsley, optional, for garnish

# Instructions:

01 - Cook pasta according to package instructions until al dente. Drain and set aside.
02 - Season salmon with salt and pepper. In a skillet over medium heat, add olive oil and sear salmon for 2–3 minutes per side until cooked through. Remove and set aside.
03 - In the same skillet, sauté garlic and sun-dried tomatoes for 1–2 minutes until fragrant.
04 - Pour in the heavy cream and bring to a gentle simmer. Stir in parmesan cheese and Italian seasoning until smooth.
05 - Add baby spinach and cook until wilted.
06 - Return salmon to the skillet and stir gently to coat with the sauce.
07 - Add cooked pasta and toss until everything is well coated in the creamy sauce.
08 - Season with salt and pepper to taste. Garnish with chopped parsley and serve warm.
