Creamy Tomato Pasta (Print Version)

# Ingredients:

→ Pasta

01 - 200 g pasta (penne, fusilli, or spaghetti)
02 - Salt, for boiling water

→ Sauce

03 - 1 tbsp olive oil
04 - 2 cloves garlic, minced
05 - 1/4 tsp chili flakes (optional)
06 - 1 cup canned crushed tomatoes or tomato passata
07 - 1/2 tsp sugar (optional, to balance acidity)
08 - Salt and black pepper, to taste
09 - 1/3 cup heavy cream or half-and-half
10 - 2 tbsp grated Parmesan
11 - 1 tbsp chopped fresh basil or parsley (optional)

# Steps:

01 - Cook pasta in salted boiling water according to package instructions. Reserve 1/4 cup pasta water, then drain.
02 - Heat olive oil in a skillet over medium heat. Add garlic and chili flakes; sauté 30 seconds until fragrant.
03 - Stir in crushed tomatoes, sugar, salt, and pepper. Simmer for 5–6 minutes to thicken slightly.
04 - Lower the heat and stir in cream and Parmesan. Cook another 1–2 minutes until smooth and creamy.
05 - Add the drained pasta and reserved pasta water to the sauce. Toss well to coat.
06 - Serve immediately, garnished with more Parmesan and fresh herbs if desired.
