01 - 3 large eggs, separated

07 - 2 tbsp milk
08 - 1 tbsp butter
09 - 2 slices cooked turkey bacon or vegetarian alternative (optional)
10 - Salt and pepper, to taste
11 - Fresh herbs (chives or parsley), for garnish (optional)

# Steps:

01 - Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
02 - In a clean bowl, beat egg whites with cream of tartar and salt until stiff peaks form.
03 - In a separate bowl, mix the egg yolks and cream cheese until smooth.
04 - Gently fold the egg yolk mixture into the egg whites until just combined.
05 - Spoon the mixture onto the prepared baking sheet, forming 4 equal rounds for sandwich halves.
06 - Bake for 20 minutes or until golden and set. Cool slightly.
07 - Whisk together 2 eggs, milk, salt, and pepper. Melt butter in a nonstick skillet over medium heat. Scramble eggs until just set.
