# Ingredients:

01 - 1 cup mashed sweet potato, cooked and cooled
02 - 1 1/4 cups all-purpose flour
03 - 1/2 cup brown sugar
04 - 1/4 cup white sugar
05 - 1/2 cup unsalted butter, softened
06 - 1 egg
07 - 1 teaspoon vanilla extract
08 - 1 teaspoon ground cinnamon
09 - 1/2 teaspoon baking soda
10 - 1/4 teaspoon ground nutmeg
11 - 1/4 teaspoon salt
12 - Optional: 1/2 cup chopped pecans or walnuts

# Instructions:

01 - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
02 - In a large bowl, cream together the butter, brown sugar, and white sugar until light and fluffy.
03 - Add the egg, vanilla extract, and mashed sweet potato to the creamed mixture. Mix until fully combined.
04 - In another bowl, whisk together the all-purpose flour, ground cinnamon, baking soda, ground nutmeg, and salt.
05 - Gradually add the dry ingredients to the wet mixture, stirring just until combined. Fold in nuts if using.
06 - Drop spoonfuls of dough onto the prepared baking sheet, spacing about 2 inches apart.
07 - Bake for 10–12 minutes or until the edges are golden and the centers are set.
08 - Let the cookies cool on the pan for 5 minutes before transferring them to a wire rack.
