Chocolate S'Mores Cookies (Print Version)

# Ingredients:

→ Cookie Dough

01 - 1 stick unsalted butter, softened
02 - 1/2 cup light brown sugar, firmly packed
03 - 1/2 cup granulated sugar
04 - 1 teaspoon pure vanilla extract
05 - 1 egg, at room temperature
06 - 1 1/2 cups all-purpose flour, spooned and leveled
07 - 1/2 teaspoon baking powder
08 - 1/2 teaspoon baking soda
09 - 1/2 teaspoon table salt
10 - 1 cup semi-sweet chocolate chips, plus more for topping

→ S'mores Filling

11 - 6 graham crackers, broken in half
12 - 3 milk chocolate candy bars
13 - 12 regular-sized marshmallows

# Instructions:

01 - Preheat oven to 350℉ (175℃) and line two light-colored baking sheets with parchment paper.
02 - In the bowl of a stand mixer, cream the butter, brown sugar, and granulated sugar until light and fluffy. Beat in vanilla and egg, scraping down sides as needed.
03 - In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Add the dry ingredients to the stand mixer and mix just until combined. Stir in chocolate chips.
04 - Arrange graham crackers, chocolate bar pieces, and marshmallows on the prepared baking sheets. Use a large cookie dough scoop to portion approximately 3 tablespoons of dough for each cookie. Slightly flatten the dough into a disc shape and place it on top of the marshmallows. Top with additional chocolate chips if desired.
05 - Bake for 10-13 minutes, or until the cookie edges are light golden brown and marshmallows have melted.
06 - Let the cookies cool completely on the baking sheets before serving.

01 - Be sure to use light-colored baking sheets to avoid over-browning the cookies.
