01 - 4 cups baby potatoes, halved
02 - 2 tablespoons olive oil
03 - 1 packet ranch seasoning mix
04 - 1 cup shredded cheddar cheese
05 - 1/2 cup grated parmesan cheese
06 - 1/2 teaspoon garlic powder
07 - 1/2 teaspoon black pepper
08 - 1/2 teaspoon paprika
09 - 2 tablespoons chopped fresh parsley

# Instructions:

01 - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
02 - In a large bowl, toss the halved baby potatoes with olive oil, ranch seasoning mix, garlic powder, black pepper, and paprika until well coated.
03 - Spread the potatoes in a single layer on the prepared baking sheet, cut-side down.
04 - Roast for 25–30 minutes or until the potatoes are golden brown and crispy on the edges.
05 - Remove from oven, sprinkle shredded cheddar and parmesan evenly over the potatoes.
06 - Return to the oven for 5–7 minutes or until the cheese is melted and bubbly.
07 - Garnish with chopped parsley if desired and serve hot.
