Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large bowl, toss the halved baby potatoes with olive oil, ranch seasoning mix, garlic powder, black pepper, and paprika until well coated.

Spread the potatoes in a single layer on the prepared baking sheet, cut-side down.

Roast for 25–30 minutes or until the potatoes are golden brown and crispy on the edges.

Remove from oven, sprinkle shredded cheddar and parmesan evenly over the potatoes.

Return to the oven for 5–7 minutes or until the cheese is melted and bubbly.

Garnish with chopped parsley if desired and serve hot.
