In a skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and onions are soft. Drain any excess grease.

Add minced garlic and cook for 1 more minute. Remove from heat.

In a large mixing bowl, combine the beef mixture, cream of mushroom soup, sour cream, salt, pepper, paprika, thawed hash browns, and 1 1/2 cups of shredded cheddar cheese. Mix until fully combined.

Transfer the mixture to the prepared baking dish and spread evenly. Top with the remaining 1/2 cup of cheese. Drizzle with olive oil or melted butter if desired for a crispier top.

Bake uncovered for 45–50 minutes, or until the top is golden and the casserole is bubbling.
