Cheesy Crispy Quesadillas (Print Version)

Golden tortillas filled with melted cheese, ready in 10 minutes - customizable comfort food that's quick and delicious.

# Ingredients:

→ Base

01 - 2 large flour tortillas
02 - 1 cup (100 g) shredded cheese (cheddar, Monterey Jack, or a blend)

→ Optional Fillings

03 - 1/4 cup black beans, drained and rinsed
04 - 1/4 cup sweet corn
05 - 1/4 red bell pepper, finely diced
06 - 1 spring onion, sliced
07 - 1 tsp chopped cilantro
08 - Pinch of chili flakes or cumin (optional)

→ For Cooking

09 - 1 tbsp butter or neutral oil

→ For Serving

10 - Sour cream
11 - Salsa or pico de gallo
12 - Guacamole or sliced avocado

# Steps:

01 - Heat a non-stick skillet over medium heat and add a little butter or oil.
02 - Place one tortilla in the pan and sprinkle cheese evenly over half of it. Add any desired fillings on top of the cheese, then fold the tortilla in half.
03 - Cook for 2–3 minutes per side, pressing gently with a spatula, until golden brown and cheese is melted.
04 - Remove from pan, slice into wedges, and serve hot with your favorite sides.

# Notes:

01 - For extra crispness, use a dry pan after brushing tortillas lightly with oil.
02 - Swap flour tortillas for corn for a gluten-free version.
03 - Add cooked chicken or chorizo for a meaty option.
