Carrot Cake Energy Balls (Print Version)

Sweet and spiced no-bake snack packed with wholesome ingredients for a healthy treat.

# Ingredients:

01 - 1 cup old-fashioned oats
02 - 1 cup shredded carrots (freshly grated preferred)
03 - 1/4 cup raisins (optional)
04 - 1/4 cup chopped walnuts or pecans
05 - 1 tsp ground cinnamon
06 - 1/2 cup creamy nut butter (almond, peanut, or cashew)
07 - 1 tsp vanilla extract
08 - 2–3 tbsp maple syrup (adjust for sweetness)

# Steps:

01 - Shred the carrots using a grater or food processor.
02 - In a large mixing bowl, combine shredded carrots, oats, raisins, walnuts, cinnamon, nut butter, vanilla, and maple syrup.
03 - Mix well until all ingredients are evenly distributed.
04 - Chill the mixture in the refrigerator for 30 minutes to make it easier to roll.
05 - Once chilled, scoop and roll the mixture into bite-sized balls (about 1 tablespoon each).
06 - Store the energy balls in an airtight container in the refrigerator for up to 1 week.

# Notes:

01 - For a sweeter variation, blend in a few pitted dates with the carrots.
02 - Add 2 tablespoons of ground flaxseed or shredded coconut for extra fiber and texture.
03 - Substitute honey for maple syrup if desired.
04 - To make energy bars instead of balls, press the mixture into a parchment-lined pan, chill, and slice into bars.
