Slice sweet potatoes into very thin rounds (⅛ inch or thinner) using a mandoline or sharp knife.

Preheat air fryer to 350°F (175°C) for 3 minutes.

Arrange slices in a single layer in the air fryer basket (work in batches to avoid overlap). Air fry for 10–15 minutes, shaking the basket halfway through. Monitor closely in the last few minutes to prevent burning — cooking time varies by thickness.

Remove chips once crisp and golden. Let cool slightly — they’ll crisp up more as they cool. Repeat with remaining slices. Store in an airtight container once fully cooled.
